One Bowl Oatmeal Cookies

 Ingredients:

1 cup oats

½ teaspoon baking powder

¼ teaspoon cinnamon

1 large banana

3 Tablespoons nut butter

1 ½ Tablespoons oil

½ teaspoon vanilla

1 Tablespoon honey

 Directions:

Preheat oven to 350°F.

Combine dry ingredients in a bowl. Using a fork, mash the banana into the oatmeal mixture. Stir in nut butter, oil, vanilla, and honey.

Place spoonfuls of dough onto a baking sheet. Bake 10-15 minutes until golden brown.

 Dietary Modifications:

  1. Vegan: Replace honey with maple syrup, agave nectar or liquid stevia.
  2. Nut Allergy: Replace nut butter with sunflower seed butter or soynut butter. (Despite its name, soynut butter contains soybeans, not nuts.)
  3. Gluten Free: Oats are naturally gluten-free. However, they may be processed in a facility that processed wheat, barley, or rye. If you are concerned about cross-contamination, look for a brand that specializes in gluten-free products, like Bob’s Red Mill.
